Вершкове масло (коров’яче масло) — харчовий продукт, що виготовляється сепаруванням або збивання молока або вершків, отриманих з коров’ячого молока, рідше з молока інших видів великої та дрібної рогатої худоби. Має високий вміст молочного жиру — 50-82,5% (частіше — 78-82,5%; в топленому маслі — близько 99%).
Принципова відмінність вершкового масла від вершків полягає в співвідношенні жиру і води. Вершкове масло є емульсією, в якій вода є дисперсною фазою, а жир — дисперсійним середовищем. У вершках жир є дисперсною фазою, а вода — дисперсійним середовищем.
